“Elevation” in the heart of Aspen’s restaurant alley is a modern American bistro with cuisine that has influences of the American south, California, South America and Asia, all integrated with classical French technique. This ground floor restaurant does not boast of a view but the contemporary classy interiors are striking and comfortable. An exciting range of appetizers from asparagus ravioli to watercress salad are served to delight the eye and palate. The entrees and lighter meals such as shrimp quesadilla with pepper-jack cheese and corn salsa are cooked to perfection.
